Baked Oatmeal

If you are an FTM or FTL from TMI, I'm sure you remember Baked Oatmeal. If you aren't, then you don't know what in tarnation I'm talking about, not to mention what Baked Oatmeal even is.

I googled Baked Oatmeal last week and found TMI's recipe-straight out of the cookbook! I had to cut in down, because the recipes feeds 30 good sized portions! But if you've been craving this stuff, it is so easy to make. And if you've never had it, go ahead and whip up a batch. Everyone in my house liked it so much, I made it again the next day. And no, there are never any leftovers. Eat it warm, with a little milk on top. Ella loved it- she returned frequently to the kitchen to fuss and whine and reach for the top of the counter because she wanted some more so badly!

Here's the recipe-

Baked Oatmeal


1/2 cup vegetable oil
1 cup of sugar, white or brown
2 eggs
3 cups oatmeal
1 cup milk
2 tsp baking powder
1 tsp salt


Mix together oil, sugar and eggs. Add in remaining ingredients. Mix well. At this point, I add in a couple of tablespoons of flax seed meal. Great added nutrition! Pour mixture into a 9x13 pan. Bake at 350 degrees for 30 minutes. Serve warm with milk if desired.

Sounds like basically the "oatmeal muffins/bread" we came up with, except I put in a little four and some applesauce or sliced apples, and cinnamon. Yum!

That should have been flour, not four!
